I think one major reason is because of the superior corrosion resistance of stainless steel. This makes it an excellent choice for many harsh environments. Forum
Additionally, coiling the tubing allows for a lot of flexibility in terms of direction and application. It can be bent and arranged in many ways without breaking or being damaged. Forum
And don't forget about it's high strength-weight ratio. It's much lighter than many other materials which could be used, but just as sturdy, if not more so. Forum
