I've heard of Global Cromova 18 stainless steel being used in casting, particularly for high-quality kitchenware. Does anyone have any experience or views on this?

Global Cromova 18 is pretty well regarded in the cutlery world. It's known for being amazingly durable and sharp - and it's rust resistant too!

Agree. I have a set of kitchen knives made with Cromova 18, and they're fantastic. Well worth the investment.

Cromova 18 is supposedly a unique blend that's designed to be hard enough to hold a sharp edge, but soft enough to be relatively easily sharpened. Quite an impressive balance.
